Capperini are harvested when they are still blooming buds and then cleaned and hand-sifted. Dipped in a delicate wine vinegar that rounds out the flavor without altering it. The size, equal to a gauge of 6mm, called super occhiellino or non pareil, represents the best selection of capers, ideal for haute cuisine preparations. Excellent in sauces and salads or as pizza toppings.
