Dried Porcini Mushrooms, according to a Ministerial Decree (No. 249 of 24/10/1998), are divided into 5 categories: Extra, Special, Commercial, Crumbs, Powder.
The law requires that the packaging and sale of Dried Porcini Mushrooms be accompanied by this designation; on the bags the group must always be specified. The decree differentiates the groups according to the degree of integrity and development that the fresh specimens had and also in relation to the “drying” system.
Extra Quality: They are the best quality because they only come in thin, perfect white slices, in quantities of not less than 60 percent.
Special Quality: The inside of the mushroom should be clear (cream to hazelnut) and the presence of crumbs is tolerated only if handling fragments.
To offer maximum flexibility, the bags and new packages of dried mushrooms are available in packs of only 6 pieces.
